Flourless Zucchini Brown

ingredients:


  •  1/2 cup creamy natural almond butter
  •  1 ripe medium banana mashed
  •  1 large egg
  •  1/4 cup raw honey
  •  1/2 cup unsweetened cocoa powder (do not use dutch processed)
  •  1 tsp vanilla
  •  1/2 tsp baking soda
  •  1 cup finely shredded zucchini
  •  1 cup semi-sweet chopped chocolate (to keep this strictly paleo, you can use paleo chocolate chips)

Directions:


  1. Preheat oven to 350°F. Line a 9 inch by 9 inch baking pan with parchment paper.
  2. In a large bowl, combine almond butter, banana, egg, honey, cocoa powder, vanilla and baking soda. Mix batter until it is evenly combined. Batter will be quite dry.
  3. Stir in the zucchini. As you continue to stir, the zucchini will release some water and you should see the batter becoming more liquid. Stir until batter is evenly mixed and no longer dry and it becomes a thick liquid batter. Stir in ½ cup chocolate.
  4. Pour batter into prepared pan. Sprinkle surface with remaining ½ cup chocolate. Bake in the oven for about 30 minutes or until toothpick inserted comes out clean.
  5. Allow brownies to cool before cutting and serving.
